An excellent compote served with ice cream or panna cotta. You can use other berries if you can't find elderberries, but elderberries are best for their tart flavour.

500g elderberries
250g pears, peeled and sliced
250g prunes, halved and stoned
4 tablespoons caster sugar, more to taste
large strip of lemon peel
1 small cinnamon stick

In a saucepan combine the elderberries, pears, prunes, sugar, lemon peel, cinnamon and a few tablespoons of water.
Bring to a boil then reduce heat to low and simmer until the berries burst and the pears are soft. Taste for sweetness and add more sugar if desired.
Let cool and chill in the fridge. Remove peel and cinnamon stick before serving.
