2 tart apples - peeled, cored and diced
300g elderberries, stemmed and washed
1 cinnamon stick
1 (5cm) strip lemon peel
100g caster sugar, more to taste
1 tablespoon cornflour

In a saucepan, combine the apple, elderberries, cinnamon stick, lemon peel, sugar and a few tablespoons of water. Simmer 15 minutes until the apples and berries are very soft.
Remove the rind and cinnamon stick and pass the liquid through a sieve or a food mill. Return to the saucepan, taste for sugar and return to a simmer.
Mix the cornflour with a little water to make a slurry. Add to the simmering sauce and cook till thickened and no longer cloudy. Remove from heat, let cool and refrigerate. Stir well before using.
