Simple dark chocolate muffins

    I made these simple muffins using some cheap dark chocolate, and they turned out tasting so good!

    Ingredients

    • 200g dark chocolate
    • 100g butter, softened
    • 100g caster sugar
    • 100g self raising flour
    • 2 teaspoons baking powder
    • 2 eggs
    • 1 tablespoon milk

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Over a pan of boiling water, melt the chocolate and a knob of the butter.
    3. Cream together the remaining butter and the sugar in a large mixing bowl.
    4. Add a little bit of flour and an egg to the buttery sugar, and stir. Then add another bit of flour and the other egg, and stir again. Stir the rest of the flour and the baking powder into the mixture.
    5. When the chocolate has melted completely, stir it into the bowl.
    6. Add the milk (and maybe a bit more flour if it looks too wet).
    7. Spoon the mixture into 12 muffin cases.
    8. Bake until a tester in the centre of the muffin comes out clean, 20 to 25 minutes.
