Elderberry grape pie

    As a child, I would get in trouble from my mum for poking my fingers through the pastry to get at the filling!

    Serves: 8 

    • 2 tablespoons plain flour
    • 110g light brown soft sugar
    • 1 teaspoon ground cinnamon
    • 500g shortcrust pastry
    • 450g elderberries
    • 40g seedless grapes
    • 1 tablespoon apple cider vinegar
    • 30g unsalted butter

    1. Preheat the oven to 230 C / Gas 8. On a lightly floured surface, roll out half of the pastry and place in a 23cm pie tin. Roll out the remaining pastry to top the pie and set aside.
    2. Combine the flour, sugar, and cinnamon; reserve 1/4 of this mixture. Add the remaining 3/4 flour mixture to the elderberries and grapes, and mix thoroughly.
    3. Sprinkle the reserved flour mixture evenly over the bottom of the pie base. Place the filling on top and dot with butter. Drizzle the vinegar over the pie filling, and top with the remaining pastry.
    4. Bake in the preheated oven for 10 minutes. Reduce the heat to 180 C / Gas 4 and bake until golden brown, 35 to 40 minutes.
