Blackcurrants make a fine vinegar, which I like to give as a homemade Christmas gift.

Ingredients
Makes: 1 bottle
450g blackcurrants
600ml apple cider vinegar
caster sugar to taste

Wash and dry the blackcurrants. Place them in a large jar and cover loosely with a lid, do not screw it on tight. Let sit for a week in a cool place, stirring once in a while.
Strain through a sieve lined with muslin. Measure out the liquid and per 100ml liquid add 50g sugar, slightly more if you prefer the vinegar sweeter.
Bring to the boil and cook till the sugar has dissolved completely. Pour in a sterilised bottle and cork. Store in a cool dark place.
