Double chocolate oat brownies

    Double chocolate brownies with walnuts and oats. These taste great when warm and topped with a scoop of vanilla ice cream.

    Serves: 20 

    • 225g butter
    • 120g dark chocolate
    • 400g caster sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 125g plain flour
    • 1 pinch salt
    • 175g dark chocolate chips
    • 120g chopped walnuts
    • 60g oats

    1. Preheat oven to 180 C / Gas 4. Lightly grease a rectangular baking dish.
    2. Melt butter and dark chocolate together in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove from heat and pour chocolate mixture into a bowl.
    3. Mix sugar, eggs and vanilla extract into chocolate mixture using a fork. Stir flour and salt into chocolate mixture until mixture is smooth; fold in chocolate chips, walnuts and oats. Pour mixture into the prepared baking dish.
    4. Bake in the preheated oven until brownies are beginning to pull away from sides and middle is done, 25 to 30 minutes. Cool before cutting.
