Skinny girl chocolate chip cookies

    Chocolate chip cookies made with cocoa nibs, pureed prunes and wholemeal flour are a skinnier version of the traditional favourite. They still taste great! You can use 2 tablespoons of butter instead of pureed prunes. Or try 1 tablespoon butter and 1 tablespoon Greek yogurt or avocado.

    Ingredients
    Makes: 12 cookies

    • 60g wholemeal flour
    • 90g cocoa nibs
    • 4 tablespoons honey
    • 2 tablespoons pureed prunes
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon baking powder
    • 1 pinch sea salt

    Method

    1. Preheat oven to 180 C / Gas 4.
    2. Mix flour, cocoa nibs, honey, prunes, vanilla extract, baking powder and sea salt together in a bowl until mixture is smooth. Scoop mixture up with an ice cream scoop or tablespoon and drop individual cookies onto a baking sheet.
    3. Bake in the preheated oven until cookies are lightly browned, about 8 minutes.
