Parmesan baked potatoes

    These are tasty and relatively quick baked potatoes. Serve straight from the oven still in the oven dish to delight the diners as they look so delicious.

    Ingredients
    Serves: 2 

    • 2 tablespoons olive oil
    • 2 to 3 tablespoons grated parmesan cheese
    • 1/4 teaspoon dried onion powder
    • 1/4 teaspoon dried garlic powder
    • salt and pepper
    • 2 good-sized baking potatoes, scrubbed and cut in half lengthwise
    • chives for garnishing

    Method
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat the oven to 200 C / Gas 6.
    2. Drizzle some of the oil in a shallow oven dish.
    3. Evenly sprinkle all the other ingredients except the chives into the dish. Place the potatoes cut side down.
    4. Bake in the middle of the oven till golden brown and cooked through, 30 to 35 minutes.
    5. Flip potatoes over cut side up and sprinkle with chives.

    Other ideas and leftover tip

    If you have it, add 1 teaspoon chicken salt instead of dried onion and garlic powder. If using chicken salt, go easy on adding more salt. Any leftovers can be cut up and added to a salad, or used in a Spanish omelette.
