Bacon-wrapped roe deer back strap

    The back strap of a deer is also called "fillet". It is the piece of meat that runs each side of the back bone. Serve this delicious cut of venison with potatoes and vegetables of your choice together with rowan berry jelly or cranberry jelly, both best homemade.

    Serves: 2 

    • 1/2 roe deer back strap (the thicker end)
    • 4 rashers dry cured bacon

    1. Preheat the oven to 170 C / Gas 3.
    2. Tightly wrap the back strap in the bacon and wrap the entire piece in baking foil.
    3. Place it in a roasting tin and roast in the preheated oven for 30 minutes.
    4. Remove from the foil and grill on all sides until the bacon is crisp.
