These fritters can be served as a side dish or a vegetarian main course.

Makes: 12 fritters
1/2 teaspoon salt
1 small onion
1 egg, beaten
1 teaspoon dried thyme
1 to 2 teaspoons sugar
salt and pepper to taste
2 tablespoons breadcrumbs
oil for frying

Grate the swede and mix with 1/2 teaspoon salt in a bowl. Set aside for a few minutes until some liquid has been drawn out. Drain.
Mince the onion. Place in a bowl with the grated swede, egg, thyme, sugar, a scant 1/2 teaspoon salt and a generous amount of pepper. Add breadcrumbs and stir until well combined.
Heat oil in a frying pan. Put about 2 tablespoons for each fritter in the hot oil and slightly flatten with the back of a spoon. Fry until golden brown on one side, then flip over and brown from the other side.
