    This spicy chicken and lime soup topped with avocado, queso fresco and fresh coriander will appeal to anyone who is a fan of Mexican flavours.

    Ingredients
    Serves: 4 

    • 2 skinless, boneless chicken breasts
    • 1 tablespoon olive oil
    • 1 large onion, chopped, divided
    • 3 limes, juiced
    • 45g freshly chopped coriander, divided
    • 2 jalapeno peppers, halved and thinly sliced
    • 3 cloves garlic, minced
    • 1L water
    • 2 tablespoons reduced salt chicken stock granules
    • 3 large firm-ripe avocados, cut into chunks
    • 60g crumbled queso fresco cheese, or to taste

    Method

    1. Bring a small pot of water to the boil. Add chicken breasts; simmer until the chicken is cooked through, about 7 minutes. Drain and allow chicken to cool slightly; shred or finely slice chicken.
    2. Heat olive oil in a large pot over medium heat. Add 1/2 of the chopped onion, lime juice, 1/2 of the chopped fresh coriander, jalapeno peppers and garlic until onion is slightly greenish in colour, about 5 minutes.
    3. Combine water and stock granules in a small bowl. Pour into the pot. Let cook until just heated through, about 5 minutes. Stir chicken into the pot.
    4. Ladle soup into 4 bowls. Top with remaining onion, fresh coriander, avocado and queso fresco.
