Baked feta filo fingers

    Feta. The Greek delicious cheese treat, known all over the world. What happens when you wrap into a crispy filo pastry? Try it and see yourself. We are confident that you will lick your fingers afterwards!

    Serves: 4 

    • 1 small bunch fresh mint
    • 1 tablespoon olive oil
    • 200g feta, sliced into 4 fingers or more according to taste
    • 2 large filo pastry sheets
    • 25g butter, melted
    • salad leaves and lemon wedges to serve

    1. Preheat the oven to 180 C / 160 C Fan / Gas 4. Finely chop the mint and mix with the olive oil. Brush over each feta finger and set aside.
    2. Brush one filo sheet generously with melted butter and lay the other sheet on top. Cut the layered filo sheets into 4 equal rectangles.
    3. Place a finger of feta at the end of a rectangle and wrap the filo around the cheese, brushing with butter as you go to make it stick. Brush the outside of the pastry with butter.
    4. Place the fingers on a baking sheet lined with baking paper and bake until golden brown and crisp, about 20 to 25 minutes. Serve with salad leaves and lemon wedges.
