150g orange peel or mixed peel
450g spelt flour (white or wholemeal)
150g flaked almonds
1 tablespoon gingerbread spice (see footnote)
1 teaspoon bicarbonate of soda
2 eggs, beaten
almonds halves, nuts or candied peel for garnish

Mince the peel by hand or in the food processor.
Put peel, flour, honey, almonds, gingerbread spice, bicarb and half of the eggs in a bowl. Using an electric mixer, mix it at low speed until well combined. Reserve the rest of the egg for brushing.
Briefly knead the mixture on a large board or a clean work surface till smooth. If using wholemeal spelt flour, which absorbs more liquid than white flour, the mix might be a little dry and crumbly, in that case, add a little more of the beaten egg. Place in a container with a lid and let rest for 1 hour.
Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
Roll out the dough to about 3mm thick and and cut out shapes of your choice. Place them on the prepared baking tray.
Brush with beaten egg and garnish with almond halves to taste.
Bake in the preheated oven until lightly coloured, about 10 minutes.
