I try to cut down on plain white flour and these pancakes come out just as good with wholemeal spelt flour.

125g wholemeal spelt flour
60ml sparkling water
1 pinch salt
1 knob butter
Method Prep:5min › Cook:15min › Ready in:20min
Add all ingredients except butter to a bowl and whisk together till smooth.
Melt the butter in a large nonstick frying pan. Place about a quarter of the batter into the pan. Fry until brown on both sides, flipping once. Remove from pan and keep warm. Repeat with remaining batter.
Fill with applesauce or jam and roll up, or eat them flat with toppings of your choice.
