Chicken and broccoli salad

    This salad is a great way to use up leftover cooked chicken and eat your greens! The tangy mayonnaise dressing is easy to whip up, too.

    Serves: 10 

    • 700g broccoli florets
    • 3 cooked skinless, boneless chicken breasts, cubed
    • 100g chopped walnuts
    • 6 spring onions, chopped
    • 225g mayonnaise
    • 4 tablespoons apple cider vinegar
    • 50g granulated sugar, or to taste
    • 50g cooked bacon, chopped up or crumbled

    1. Combine broccoli, chicken, walnuts and spring onions in a large bowl.
    2. Whisk mayonnaise, vinegar and sugar together in a bowl until well blended.
    3. Pour mayonnaise dressing over broccoli mixture; toss to coat.
    4. Cover and refrigerate until chilled, if desired. Sprinkle with crumbled bacon to serve.


    The recipe calls for raw broccoli, but I like to microwave about 2 minutes in a small bit of water to steam, then chill. You can omit the chicken and it makes a delicious broccoli salad.
