Low-fat granola

    This is a recipe for homemade granola with only a tiny amout of rapeseed oil and without white sugar, it is only minimally sweetened with demerara sugar, maple syrup and honey. If you prefer it sweeter you can increase the amount of one or all of the sweeteners.

    Makes: 1 large tin

    • 375g rolled oats
    • 2 tablespoons walnuts, almonds or hazelnuts, chopped
    • 2 tablespoons raw hulled sunflower seeds
    • 4 tablespoons buckwheat groats (optional)
    • 4 tablespoons flaxseeds
    • 125g smooth apple sauce
    • 1 to 2 tablespoons rapeseed oil
    • 1 to 2 tablespoons maple syrup, to taste
    • 1 to 2 tablespoons demerara sugar, to taste
    • 1 to 2 tablespoons honey, to taste

    1. Preheat the oven to 140 C / Gas 1. Lightly grease a large rimmed baking tray.
    2. Mix oats, walnuts, sunflower seeds, buckwheat and flaxseed in a large bowl.
    3. Warm the apple sauce in a small saucepan on the hob or in a bowl in the microwave. Add oil, maple syrup, demerara sugar and honey and stir until the sugar has dissolved. Add this to the oat mix and mix well, this is best done by hand.
    4. Evenly spread the granola out on the prepared baking tray. Bake in the preheated oven until browned and crisp, about 1 hour, stirring and redistributing it every 15 to 20 minutes to ensure even browning. Remove from the oven and let cool completely. Store in an airtight container.
