Bread spice mix

This is a bread spice blend that is used in a lot of hearty country breads in Germany and Austria. I use about 1 tablespoon per loaf.

- 1 heaped tablespoon caraway seeds
- 1 heaped tablespoon fennel seeds
- 1 heaped tablespoon anise seeds
- 1/2 tablespoon coriander seeds
- 20 fenugreek seeds

- Toast all spices in an ungreased pan at low to medium heat until fragant. Move the pan every so often and stand by to make sure the spices don't burn.
- Let cool, then finely grind in a spice mill or with a mortar and pestle. Store in a jar.
