Bread spice mix

    This is a bread spice blend that is used in a lot of hearty country breads in Germany and Austria. I use about 1 tablespoon per loaf.

    • 1 heaped tablespoon caraway seeds
    • 1 heaped tablespoon fennel seeds
    • 1 heaped tablespoon anise seeds
    • 1/2 tablespoon coriander seeds
    • 20 fenugreek seeds

    1. Toast all spices in an ungreased pan at low to medium heat until fragant. Move the pan every so often and stand by to make sure the spices don't burn.
    2. Let cool, then finely grind in a spice mill or with a mortar and pestle. Store in a jar.
