Pineapple cucumber salad

    Fresh pineapple, cucumber, spring onions, herbs and a chilli-lime dressing are combined to make this light, refreshing salad.

    • 1/2 pineapple - peeled, cored and cut into chunks
    • 1 cucumber, quartered lengthwise and cut into chunks
    • 2 spring onions, thinly sliced
    • 3 tablespoons finely chopped fresh coriander
    • 3 tablespoons finely chopped fresh mint
    • 3 tablespoons sweet chilli sauce
    • 2 tablespoons sesame oil
    • 2 tablespoons fresh lime juice
    • 1 lime, zested
    • 1 tablespoon fish sauce
    • 1 tablespoon brown sugar, or to taste

    1. Place pineapple, cucumber, spring onions, coriander and mint in a large bowl.
    2. Whisk chilli sauce, sesame oil, lime juice, lime zest and fish sauce together; whisk in brown sugar, 1 teaspoon at a time, until dressing has desired sweetness. Pour chilli dressing over pineapple mixture; toss to combine.
