S'mores made indoors

    Oven-baked s'mores have all the flavour and texture of camp fire-roasted s'mores but can be prepared indoors any time of year!

    Serves: 12 

    • 85g digestive biscuit crumbs
    • 4 tablespoons coconut oil, melted, divided
    • 175g milk chocolate chips
    • 12 large marshmallows

    1. Lightly grease a 12-hole muffin tin.
    2. Stir biscuit crumbs and 2 tablespoons coconut oil together in a bowl. Press mixture into the base of the prepared muffin tin.
    3. Combine chocolate chips and remaining coconut oil in a microwave-safe glass or ceramic bowl; melt in the microwave in 30-second intervals, stirring after each melting, for 1 to 1 1/2 minutes (depending on your microwave). Divide melted chocolate mixture evenly on top of biscuit bases in muffin tin.
    4. Press 1 marshmallow horizontally into the chocolate on each s'more; refrigerate until chocolate is firm, 1 to 2 hours.
    5. Set oven rack about 15cm from the grill and preheat.
    6. Grill s'mores until marshmallows are browned and puffed, 1 to 1 1/2 minutes. Return muffin tin to fridge to set chocolate and marshmallow, 30 to 60 seconds. Loosen and remove s'mores from the muffin tin with a knife.

    I must give this recipe 5 stars for the use of coconut oil. It gives plain store bought graham crackers more depth. This was a fun recipe to make with my 8 year old daughter! Best indoor s'mores recipe I've tried!  -  11 Jul 2014  (Review from Allrecipes US | Canada)


    *Nobody* doesn't like s'mores! There's something about that roasted marshmallow flavor... I used 2/3 chocolate chips and 1/3 very high quality 88% chocolate, and it was still plenty sweet for this dark chocolate connoisseur. I will add more coconut oil to the graham crackers next time, as they were a little crumbly.     As I made these, I kept in mind that people said they fell apart. I threw them in the freezer for about 5 minutes as a final step before cutting them. They came out just like the picture. Also, it did take longer in the broiler and I had to gently coax them along to brown. I use coconut oil all the time! I don't use it with brownies as I prefer not to have that coconut taste.
