Crunchy roast potatoes


    Flavoured with garlic and rosemary, these roast potatoes are truly delicious. The secret to crunchy roast potatoes is to par-boil them before roasting. The potatoes not only absorb flavour and salt, but it helps them become really crispy while they roast in the oven.

    Serves: 6 

    • 900g yellow potatoes, such as Maris Piper, halved
    • 3 sprigs fresh rosemary
    • 3 cloves garlic, whole, peeled, bruised
    • 2 bay leaves
    • 2 tablespoons salt
    • 2 tablespoons olive oil
    • 1 pinch cayenne pepper
    • 1 pinch coarse sea salt


    1. Place potatoes in a large pot with water. Bruise the rosemary with the dull side of a knife blade and place in the pot. Add garlic, bay leaves and salt. Bring to the boil; simmer for 5 minutes. Drain; let potatoes air dry.
    2. Preheat oven to 190 C / Gas 5.
    3. When potatoes are thoroughly dry, transfer them back to the pot. Drizzle with olive oil, cayenne pepper and a pinch of salt. Stir to coat. Transfer potatoes to a rimmed roasting tin. Bake until potatoes are golden brown and crispy on the outside and soft inside, about 35 to 45 minutes, depending on the size of the potatoes.

    I have been trying different recipes on here for for roasties for a few weeks now - followed the recipe to the letter. These were the best so far and voted a great hit by the family who love their roasties. One little point - my oven at home might be a little slow as 15 mins before they were due out they didn't seem brown enough so I increased the temp. to 200c. They were lovely and crispy. In fact I might just stick with these and stop my searching although there are lots more to try on here.  -  26 Nov 2017


    Are the potatoes roasted whole, or are they cut in half? The photo shows cut potatoes, I think, but the recipes doesn't mention anything about cutting.  -  24 Nov 2017


    I made it just as the recipe called for and it was wonderful. Nice creamy inside and crispy golden brown outside. I would make this for a guest dinner. my wife loved them  -  13 Feb 2019  (Review from Allrecipes US | Canada)
