Buckwheat muffins

    These simple wholesome breakfast muffins are especially good freshly baked and spread with butter and jam.

    Ingredients
    Makes: 12 Muffins

    • 80ml sunflower oil
    • 80g honey
    • 1 egg, lightly beaten
    • 350ml water
    • 125g buckwheat flour
    • 125g plain flour
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon salt

    Method

    1. Preheat oven to 200 C / Gas 6. Grease a muffin tin or line with paper cases.
    2. In a bowl beat oil and honey till well combined. Add egg and water and beat till foamy, about 2 minutes.
    3. In a second bowl mix both flours with baking powder and salt. Add this to the oil and honey mixture and stir until just combined. Do not over-stir as this will result in dense, tough muffins. Distribute evenly between the prepared muffin cases.
    4. Bake until a tester comes out clean, 20 to 25 minutes. Let muffins cool in the tin before unmoulding.
