Apple pie muffins

    These apple muffins are topped with a brown sugar and cinnamon mixture before being baked - just like an apple pie. A lovely treat!

    Ingredients
    Serves: 12 

    • Muffins
    • 275g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 egg
    • 240ml buttermilk
    • 120g butter, melted
    • 1 teaspoon vanilla extract
    • 225g soft brown sugar
    • 225g diced apples
    • Topping
    • 100g soft brown sugar
    • 40g plain flour
    • 1 teaspoon ground cinnamon
    • 2 tablespoons butter, melted

    Method
    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat the oven to 190 C / Gas 5. Grease a 12-hole muffin tin or line with paper cases.
    2. In a large bowl, stir together 275g flour, bicarbonate of soda and salt. In a separate smaller bowl, mix together the egg, buttermilk, 120g melted butter, vanilla and 225g brown sugar until sugar has dissolved. Pour into the flour mixture; sprinkle the diced apple into the bowl and stir just until everything is blended. Spoon into the prepared muffin tin, filling the cases to the top.
    3. In a small bowl, stir together 100g brown sugar, 40g flour and 1 teaspoon cinnamon. Drizzle in 2 tablespoons of melted butter while tossing with a fork until well blended. Sprinkle this over the tops of the muffins.
    4. Bake for 25 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.

    Ohhhhh my...I am so happy to be one of the lucky few who chose to make these muffins as Jan (the submitter) intended, and refrained from any modifications, especially adding all kinds of distracting spices. I agree with Mollytina and her review completely that the wonderful apple flavor just shines through! And the bit of cinnamon in the topping is just the right amount to complement the apples. (No wonder Jan calls these Apple Pie Muffins!) If I had added all that cinnamon and other spices that others thought it was necessary to do, I would have never known what I was missing! These muffins are refreshingly delicious. The recipe stands, in my book, with no corrections necessary and will become a favorite I'll go back to often.     Wow, these are awesome! It's like eating apple pie in a muffin! What a perfect name for these moist, delicious, nicely spiced treats. No need for any additional spices, the apple flavor really is the hero here. I wouldn't change a thing!     Amazing muffins. If you are looking for a decadent muffin to serve guests, or just as a special treat, you really should try this recipe. I made these exactly as written and I wouldn't change a thing. The crumb topping is so out of this world that the muffin itself does not need any added spices. The two were a perfect balance for each other. Moist, flavorful. Grease your muffin tins very well and fill the cups to the top as directed, and you will obtain gorgeous, huge muffin tops that hold all of that spectacular crumb topping. It took a few minutes of careful excavation to remove them from the pan with the tops intact, but letting them cool for about 10 minutes helped.  -  24 Sep 2010  (Review from Allrecipes US | Canada)
