Vegan millet pilaf

    Millet is toasted and simmered with onions, carrots and green pepper for a savoury vegan side dish. Try using other herbs instead of coriander, such as parsley, basil or thyme.

    Serves: 8 

    • 1 carrot, chopped
    • 2 cloves garlic, crushed
    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 1 green pepper, chopped
    • 200g millet
    • 475ml vegetable stock
    • salt and ground black pepper to taste
    • 10g chopped fresh coriander, or to taste

    1. Blend carrot and garlic in a food processor until finely chopped.
    2. Heat olive oil in a pot over medium heat; cook and stir carrot mixture, onion and green pepper until softened, about 10 minutes. Add millet; stir until fragrant and toasted, about 3 minutes.
    3. Pour vegetable stock into millet mixture; season with salt and black pepper. Reduce heat and simmer until all the stock is absorbed and millet is tender, about 20 minutes. Stir in coriander.

    It was a bit bland for me and not very Cuban. I added cumin, lime, black beans, paprika. Also, ned to roast millet prior to adding to sautéed veg, obviously  -  02 Mar 2014  (Review from Allrecipes US | Canada)


    I added cumin, paprika, black beans and smoked beef sausage. I also used beef broth, red bell pepper, 3 cloves of garlic and a jalapeno pepper. topped it with a little sour cream and my picky eater had seconds! turned out really good!  -  12 Jun 2014  (Review from Allrecipes US | Canada)
