Upside down pineapple cake

    Upside down pineapple cake with glacé cherries is a moist classic cake with fruit that can be served slightly warm or cooled.

    Serves: 12 

    • 340g (12 oz) Utterly Butterly®
    • 340g (12 oz) caster sugar
    • 6 eggs
    • 340g (12 oz) self raising flour
    • 1/4 teaspoon vanilla extract
    • 8 tinned pineapple rings, drained
    • glacé cherries
    • 3 tablespoons golden syrup

    1. Preheat the oven to 160 C / Gas 3. Grease a 23cm (9 in) round cake tin and line with baking parchment.
    2. Beat Utterly Butterly® and sugar. Add the eggs one after another and beat well after each addition. Gradually add the flour and vanilla extract and mix until well combined.
    3. Place the pineapples slices around the tin and one in the centre.
    4. Half the glacé cherries and place a cherry half in the centre of each pineapple slice with the cut side facing up. Arrange remaining cherries around the pineapple slices.
    5. Pour the golden syrup over the pineapples and cherries.
    6. Pour the cake mixture over it and shake the tin to level the mixture.
    7. Bake in the centre of the oven until a knife in the middle of the cake comes out clean, about 90 minutes. Make sure not to open the oven door during baking.
    8. Loosen the edges of the cake with a knife. Cool for 5 minutes before unmoulding onto a serving plate.

    This is a good, simple recipe but has some mistakes. 'Add the sugar' at no. 4 should read 'Add the eggs'. Also there is no mention of putting the halved cherries among the pineapple, though the photo shows you do. And what is Gas Mark 3? It is a huge cake so I halved everything and made a half size one with 4 pineapple slices and less time in the oven. I started on 180C and turned it down to 170 about 10 minutes before finished.. Took approx 40 mins.  -  22 Aug 2017
