Matcha panna cotta

    This is a twist on classic panna cotta. The green colour (from the matcha) and the red (from the raspberries) make it a festive dessert for Christmas.

    Makes: 10 small glasses

    • 60ml water
    • 3 1/2 teaspoons powdered gelatine
    • 800ml double cream
    • 100g icing sugar, sifted
    • 3 teaspoons matcha powder
    • For the garnish
    • 10 raspberries
    • whipped cream to taste
    • 20 fresh mint leaves

    1. Place the water in a bowl and sprinkle over the gelatine. Set aside to swell, about 3 minutes.
    2. Place the cream, icing sugar and matcha powder in a saucepan over medium-low heat and simmer, stirring occasionally, for 5 minutes.
    3. Add the gelatine mixture and simmer stirring until the gelatine is completely dissolved, about 3 minutes.
    4. Pour the mixture into 10 small glasses and refrigerate until set and well-chilled, 4 to 5 hours.
    5. Garnish with whipped cream, raspberries and mint leaves and dust with icing sugar.


    This makes 10 small servings. To make it regular dessert size, divide the mixture among 6 glasses.
