Melt-in-the-mouth shortbread biscuits

    These quick and easy whipped shortbread biscuits will literally melt in your mouth when you take a bite!

    Serves: 24 

    • 225g butter, softened
    • 60g icing sugar
    • 2 tablespoons cornflour
    • 200g plain flour

    1. Preheat the oven to 190 C / Gas 5.
    2. Whip butter with an electric mixer until fluffy. Stir in the icing sugar, cornflour and flour. Beat on low for one minute, then on high for 3 to 4 minutes. Drop mixture by spoonfuls (5cm apart) on an ungreased baking tray.
    3. Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don't brown too much. Cool on a wire cooling rack.
