Courgette, bacon and sweetcorn fritters

    An allotment glut of courgettes has led to a kitchen frenzy. Had done soups, pasta sauces, scones etc, and my eldest is threatening to leave home if I give him anything else with hidden courgette! But, I served up these fritters tonight with sausages, beans and fried egg, and I don't think he realised the secret ingredient! Tomorrow, courgette chocolate cake...

    Ingredients
    Serves: 6 

    • 150g courgette, grated
    • 150g frozen sweetcorn
    • 1 small onion, diced
    • 4 rashers cooked bacon, chopped
    • 75g self raising flour, as needed
    • 2 to 3 eggs, as needed
    • milk
    • 1/2 teaspoon smoked paprika or cayenne pepper

    Method

    1. Mix all the ingredients together and add enough flour to make a soft but not runny batter. If too solid, add a splash of milk.
    2. Heat oil in a frying pan. For every fritter place 1 tablespoon batter in the hot oil and fry until golden, then turn and fry on the other side.

    Tip

    You may add a grated potato or sweet potato to the mix to make the fritters more substantial.
