Plum crumble cake

    This is a vanilla sponge cake topped with a layer of fresh plum halves and a delicious coating of oaty crumble mix. In the crumble mix are crystallised ginger pieces and ground ginger to give a warming aftertaste to this fantastic cake.

    Serves: 12 

    • 225g (8 oz) self raising flour
    • 225g (8 oz) caster sugar
    • 225g (8 oz) soft spread (vegetable fat spread)
    • 4 eggs
    • 1 teaspoon vanilla extract
    • 4 plums, stoned and halved
    • For the crumble
    • 110g (4 oz) porridge oats
    • 60g (2 oz) soft spread
    • 60g (2 oz) self raising flour
    • 60g (2 oz) dark brown soft sugar
    • 30g (1 oz) crystallised ginger, minced
    • 1 teaspoon ground ginger

    1. Preheat the oven to 180 C / Gas 4. Line a 18cm (7 in) round loose bottomed tin.
    2. In a bowl add the flour, sugar, soft spread, eggs and vanilla extract and whisk together to make a smooth batter.
    3. Transfer to the tin and place the plum halves on the top.
    4. Mix the crumble topping together by rubbing the soft spread into the other ingredients. Place on top of the plums batter.
    5. Bake till a knife inserted into the cake comes out clean, about 30 to 35 minutes.
    6. Allow to cool before removing from tin and serving.
