Taco salad bowl

    I love Mexican food and wasn't willing to part with tacos after starting my low-carb diet. This salad always satisfies my craving!

    Serves: 4 

    • 675g beef mince
    • 1 onion, diced
    • 120g jalapeno peppers from a jar, diced
    • 2 tablespoons taco seasoning mix
    • 100g thinly sliced lettuce
    • 1 tomato, chopped
    • 75g grated lighter Cheddar cheese
    • 4 tablespoons salsa
    • 4 tablespoons half-fat soured cream
    • 1 avocado - peeled, pitted, and sliced

    1. Cook and stir beef mince, onion and diced jalapeno peppers together in a pan over medium-high heat until mince is browned, 7 to 10 minutes. Stir taco seasoning into meat mixture; bring up to a simmer and cook until flavours combine, about 5 minutes.
    2. Stir mince, grated lettuce, tomato, Cheddar cheese, salsa and soured cream together in a large bowl. Divide taco mixture among 4 bowls and top each with avocado slices.

    Delicious! I used a taco seasoning recipe from this site and did everything else as instructed except I used fresh jalapeños because I didn't have canned. I was wondering if I was supposed to drain the meat and decided not to since the recipe didn't say to and it was so good.     Pretty good! I missed the chips or taco shells, but since I AM doing low carb- that's to be expected- This is a super idea!
