Sweet potato burgers

    Packed with peanuts, fresh coriander and ginger, these baked sweet potato veggie burgers are very tasty indeed!

    Ingredients
    Serves: 8 

    • 1 1/2 teaspoons vegetable oil, or as needed
    • 50g cooked and mashed sweet potatoes
    • 80g quick-cooking oats
    • 125g chopped onion
    • 75g chopped peanuts
    • 25g freshly chopped coriander
    • 2 tablespoons minced fresh ginger
    • 2 cloves garlic, minced
    • 1 1/2 teaspoons cumin
    • 1 teaspoon salt

    1. Preheat oven to 180 C / Gas 4. Grease a baking tray with vegetable oil.
    2. Place sweet potatoes, oats, onion, peanuts, coriander, ginger, garlic, cumin and salt in a bowl. Mix until fully combined. Form mixture into burgers; arrange onto the prepared baking tray.
    3. Bake in the preheated oven until one side is browned, about 15 minutes. Flip the burgers and bake until the other side is browned, about 15 minutes more.
