Stuffed liver casserole

    This is a great liver recipe I learned in school 50 years ago that I still cook. Instead of making your own stuffing you can substitute a packet of stuffing mix.

    Serves: 4 

    • 1 onion, minced
    • minced parsley, to taste
    • dried thyme, to taste
    • 60g (2 oz) breadcrumbs
    • 1 egg
    • 1 tablespoon oil
    • 2 tablespoons plain flour
    • salt and pepper
    • 450g (1 lb) pig liver
    • 450g (1 lb) streaky bacon
    • 600ml (1 pt) vegetable or chicken stock

    1. Preheat the oven to 180 C / Gas 4.
    2. In a bowl mix onion, herbs, breadcrumbs and egg. Add hot water, 1 tablespoon at a time, if the mix is dry.
    3. Heat the oil in a pan. Season the flour with salt and pepper and coat the liver with it. Fry in the hot oil until brown on both sides.
    4. Put liver to one side. Add bacon to the pan and fry at high temperature until crisp.
    5. Place liver in a baking dish and cover over with stuffing mix. Layer bacon on top. Add stock to almost cover.
    6. Bake in the preheated oven until the liver is no longer pink in the centre, about 30 minutes.
