stuffed liver casserole

    a great liver recipe i learnt in school 50 years ago that i still cook

    • 1lb pig liver
    • 1lb streaky bacon
    • 2oz breadcrumbs
    • 1 finely chopped onion
    • a mix of chopped parsley, thyme
    • pint of vegetable or chicken stock
    • 1 egg
    • 2 tbls flour seasoned with salt and pepper
    • you can substitute a packet of stuffing mix if you prefer
    • 1 tablespoon oil


    1. make a stuffing mix with onions, herbs, breadcrumbs and egg adding hot water if need be
    2. heat pan with oil added, coat liver in seasoned flour and seal
    3. put to one side and add bacon to hot pan to flash cook
    4. place liver in dish and cover over with stuffing mix
    5. layer bacon on top
    6. add stock to almost cover
    7. bake at 180 in preheated oven for 30 minutes
