Sweet potato chocolate brownies

    35 min

Do not be fooled by their name, these brownies do not taste like sweet potato. I personally do not like sweet potatoes but I love these brownies. They are a healthier alternative to using a lot of sugar and a perfect way to trick your kids into eating their veg.

    1. Preheat the oven to 180 C / Gas 4. Lightly grease and flour a 23x30cm baking tin.
    2. Poke the sweet potatoes several times with a fork and cook in the microwave until soft, about 8 minutes. The time depends on the power of your microwave and the size of the potato.
    3. Cut potato in half and scoop the inside into a bowl. Add sugar to the potato and mix.
    4. Melt the chocolate with margarine in a small saucepan on the stove.
    5. Add the melted chocolate and margarine to the potato and mix well. Add baking powder and vanilla extract, then add flour and eggs and mix well until evenly combined.
    6. Pour mixture into the baking tin and bake for 20 minutes.
    7. Once cooked, allow to cool before cutting and removing from the tin.
