Chocolate almond brownies

    These nutty chocolate chip brownies will brighten up your rainy day after making the these, especially with a sprinkle of icing sugar.

    Serves: 8 

    • 125g chocolate (any kind), chopped or chips
    • 225g butter or margarine, at room temperature
    • 225g self raising flour
    • 125g caster sugar
    • 4 eggs, beaten
    • 50g almonds, chopped
    • icing sugar for dusting

    1. Preheat oven to 180 C / Gas 4. Lightly grease a baking tin and line with grease-proof paper.
    2. Melt the chocolate and butter in a glass bowl over a pan with hot water on the hob.
    3. Sift flour into a seperate bowl and stir in the caster sugar.
    4. Stir eggs into the chocolate mix then stir in flour, caster sugar and almonds. Pour mixture into the tin and spread evenly.
    5. Bake in the preheated oven, about 30 to 35 minutes. The brownies won't be completely firm in the middle but they will firm up when cooling.
    6. Unmold the brownies and leave on a wire rack until almost completely cool. Dust with icing sugar and cut into pieces, the shape is your choice.
