My children actually enjoy Brussels sprouts made this way! They don't get soggy and are packed with flavour.

olive oil, about 1 or 2 tablespoons
1/2 small onion, grated
1 small carrot, grated
1/2 stalk of celery, grated
500g Brussels sprouts, cleaned and halved
1/2 glass of white wine
salt and pepper, to taste
1 teaspoon crushed chillies, or more to taste

Heat oil in a large frying pan over medium heat. Stir in the grated onion, carrot and celery; add the Brussels sprouts and fry for 1 minute. Pour in the wine and cover the pan. Lower the heat a little and continue to cook for 5 minutes.
Remove the lid; stir and continue to simmer a little more until all the liquid has evaporated, another minute or so. Season with salt, pepper and crushed chillies. Serve hot.
