Pan-fried spicy Brussels sprouts

    My children actually enjoy Brussels sprouts made this way! They don't get soggy and are packed with flavour.

    Ingredients
    Serves: 4 

    • olive oil, about 1 or 2 tablespoons
    • 1/2 small onion, grated
    • 1 small carrot, grated
    • 1/2 stalk of celery, grated
    • 500g Brussels sprouts, cleaned and halved
    • 1/2 glass of white wine
    • salt and pepper, to taste
    • 1 teaspoon crushed chillies, or more to taste

    Method

    1. Heat oil in a large frying pan over medium heat. Stir in the grated onion, carrot and celery; add the Brussels sprouts and fry for 1 minute. Pour in the wine and cover the pan. Lower the heat a little and continue to cook for 5 minutes.
    2. Remove the lid; stir and continue to simmer a little more until all the liquid has evaporated, another minute or so. Season with salt, pepper and crushed chillies. Serve hot.
