Lillia's choccy chippy cookies

    Ingredients
    Makes: 18 cookies

    • 125g margarine or softened butter
    • 125g demerara sugar
    • 1 egg, lightly beaten
    • 200g self raising flour
    • 145g chocolate of your choice
    • 25g almonds or nuts of your choice

    Method

    1. Preheat the oven to 190 C / Gas 5. Lightly grease 2 baking trays.
    2. Beat together the butter and sugar until light and creamy.
    3. Gradually add the beaten egg to the mix. Sift the flour into the mix and blend well. Stir in the chocolate and almonds.
    4. Place dollops of the mix onto the trays, about as long as one finger and leaving sufficient space between them to spread. Bake in the preheated oven until the cookies have a slight golden edge and are pale-ish in the centre, about 12 minutes.
    5. Transfer the cookies to a wire rack.
