These are traditional Viennese Christmas biscuits made of ground almonds and hazelnuts. They are rolled in vanilla sugar right after they come out of the oven.

Ingredients
Makes: 50 biscuits
50g ground almonds
50g ground hazelnuts
280g plain flour
70g caster sugar
1 pinch salt
200g cold butter, diced
2 egg yolks
75g icing sugar
5 teaspoons vanilla sugar

In a bowl, combine all ingredients except the egg yolks, icing sugar and vanilla sugar. Rub in the butter, then add the egg yolks and mix well until all is evenly combined and holds together. Place the mixture in the fridge and chill for 2 hours.
Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
Grease a baking tray. Shape the dough into ropes about 1cm thick, then cut each rope into 5cm pieces. Shape into crescents and carefully place them on the baking tray.
Bake until lightly coloured, about 10 minutes.
Mix together the icing sugar and vanilla sugar in a large bowl and gently roll the biscuits in the sugar while still hot, a few at a time, until evenly coated.
