Christmas star biscuits sprinkled with coconut for a wintery look, and a glace cherry in the centre.

Makes: 40 cookies
250g plain flour
150g icing sugar
1 pinch salt
1 pinch ground ginger
200g dessicated coconut
1 orange, zested
1 egg yolk
180g cold butter, diced
For the decoration
1 egg white

In a bowl, combine flour, icing sugar, salt, ginger, coconut and orange zest. Beat the egg and egg yolk together and add with the diced butter. Knead quickly into a smooth dough. Cover with cling film and chill for 1 hour.
Preheat oven to 190 C / Gas 5. Grease a baking tray.
Roll out the mixture and cut out biscuits with a 5cm star shaped cutter. Place on the baking tray and bake until lightly coloured, about 10 to 12 minutes.
While still hot, brush the biscuits with egg white and sprinkle with desiccated coconut. Place a cherry half in the centre of each biscuit.
