I always cut out these biscuits in a diamond shape, that's especially pretty with a hazelnut in the centre but you can cut them out in any shape you like.

Ingredients
Makes: 40 biscuits
300g plain flour
250g butter, softened
250g caster sugar
4 egg yolks
250g ground hazelnuts
For the filling and decoration
20 teaspoons jam or marmalade or your choice
1 recipe royal icing, lemon or hazelnut-flavoured
40 hazelnut halves

Mix flour, butter, sugar, egg yolks and hazelnuts until evenly combined and the mix holds together. Wrap in cling film and refrigerate for 1 to 2 hours.
Preheat the oven to 180 C / Gas 4. Grease a baking tray or line with parchment.
Roll out the dough to about 3mm thick on a lightly floured work surface and cut out diamond shaped or round biscuits. Transfer biscuits to prepared tray.
Bake biscuits in the preheated oven until lightly coloured, about 10 to 15 minutes.
While the biscuits are still warm, glue two biscuits together with jam or marmalade, using about 1/2 teaspoon per biscuit. Place on a wire rack to cool.
Meanwhile, prepare the royal icing according to the recipe.
Coat the cooled biscuits with icing and decorate with a hazelnut halve. Let set, then store in airtight tins.
