Walnut coins

    This is a recipe for walnut lovers, which are added to the biscuits and used for the decoration, too.

    Serves: 90 

    • 300g plain flour
    • 1 teaspoon baking powder
    • 1 pinch salt
    • 175g butter, softened
    • 100g caster sugar
    • 1 egg
    • 125g walnuts, chopped
    • For the decoration
    • 200g plain chocolate
    • 90 walnut halves (about 200g)

    1. In a bowl add flour, baking powder and salt. Mix, then add butter, sugar and egg and mix until well combined. Add walnuts and mix again until evenly distributed. Wrap in cling film or place in a container with lid and refrigerate for 1 hour.
    2. Line 2 baking trays with baking parchment. Preheat oven to 180 C / Gas 4.
    3. Shape the mixture into walnut size balls and place at ample distance on the baking tray.
    4. Flatten each biscuit with the tines of a fork. Bake in the preheated oven until golden, about 15 minutes. Let cool on a wire rack.
    5. Melt the chocolate and put a small dollop in the centre of each biscuit. Place a walnut halve on top and let sit until set. Store in airtight tins.
