Banana split pancakes
Banana chocolate chip pancakes topped with whipped cream and strawberries turn the classic banana split into a fun Pancake day treat or easy dessert.
Ingredients
Serves: 4
- 125g plain flour
- 1 tablespoon soft brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 ripe bananas
- 250ml milk
- 1 egg
- 2 tablespoons rapeseed oil
- 1 teaspoon vanilla extract
- 100g dark chocolate chips
- 325g sliced fresh strawberries
- 200ml whipped cream

- Mix flour, brown sugar, baking powder and salt together in a large bowl.
- Mash bananas in a large bowl using a fork. Add milk, egg, oil and vanilla extract; mix well.
- Stir banana mixture and chocolate chips into the flour mixture until pancake batter is blended but still slightly lumpy.
- Heat a lightly oiled pan or griddle over medium heat. Drop a ladle of pancake batter onto the pan and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining pancake batter.
- Top pancakes with strawberries and whipped cream.

Yummy recipe, my wife, four kids and I loved it. I used the blender to make oat flour and used half oat flour and half regular flour. Next time I am going to cut the brown sugar in half and likely use whole wheat flour and oat flour with no chocolate chips or whipped cream and it should be a pretty healthy pancake recipe. - 11 Jun 2017 (Review from Allrecipes US | Canada)
