Cashew nut sauce

    This easy quick sauce can be used over salads, meats etc.

    Serves: 2 

    • 125g raw cashew nuts
    • 1/2 lime, juiced
    • salt to taste

    1. Put the cashew nuts in a bowl. Pour just enough water over them to cover. Soak until soft, about 2 hours.
    2. Drain the cashews and place them in a food processor. Blend until smooth, gradually adding enough water to make a creamy sauce. Add lime juice and salt to taste.


    The sauce can be kept in the refrigerator for 1 week or more as it is preserved by salt and lime.
