Crepes with apricot jam

    I love crepes! They look beautiful and taste great simply stuffed with apricot jam and a sprinkle of icing sugar.

    Serves: 4 

    • Crepe batter
    • 2 eggs
    • 125ml of milk
    • 4 tablespoons of water
    • 75g plain flour
    • 1 pinch of salt
    • 25g caster sugar
    • a few drops of vanilla extract
    • 80g butter, melted
    • Filling
    • 125g apricot jam
    • icing sugar, for dusting

    1. Whisk eggs, milk and water together in a large bowl.
    2. Add flour, salt, sugar and vanilla extract. Mix until smooth and all the flour has been incorporated. Pour in melted butter and whisk well.
    3. Heat a small non-stick frying pan over medium heat.
    4. Pour about 2 tablespoons of the crepe batter into the centre of the pan and rotate the pan to cover the entire base with the batter.
    5. Cook on one side for about 30 to 40 seconds; turn it over with a palette knife or fish slice and cook the other side for about 30 seconds.
    6. Slide the crepe out of the pan and keep warm in a low oven. Repeat process until all the batter is used up.
    7. Spread a layer of apricot jam on each crepe; roll or fold the crepe and dust with icing sugar.
