Dates, banana, walnuts and almonds are blended with oats in these vegan banana bars, a perfect addition to lunchboxes or as a snack.

Ingredients

9 large pitted Medjool dates
110g mashed banana
1 teaspoon vanilla extract
80g rolled oats
60g walnuts
70g almonds
2 tablespoons ground linseed (flax seed)
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
8 tablespoons vanilla protein powder
40g chocolate chips (optional)

Line an 20cm square tin with parchment or cling film.
Combine dates, banana and vanilla in a large food processor until smooth, about 1 minute. Add 3/4 of the oats, walnuts, almonds, linseed, cinnamon and salt; blend.
Scrape sides down and add remaining oats and protein powder; process until mixture is well combined and thick, about 1 minute. Stir in chocolate chips.
Spoon mixture into prepared tin; press into tin using wet hands until even.
Freeze until solid, at least 2 to 3 hours. Slice into 10 bars.
