Turkey steak in sticky sriracha sauce

    Sriracha is one of my favourite sauces. It is not too hot, sour or too sweet. This easy recipe has got an intense flavour yet low in fat and no bones which is a bonus. It is great as a post workout meal.

    • 1 lemon
    • 3 tablespoons sriracha sauce (regular hot, see footnote)
    • 2 tablespoons fish sauce
    • 1 tablespoon dark soy sauce
    • 2 tablespoons honey
    • 1 tablespoon coconut sugar
    • 5 garlic cloves, finely chopped
    • 375g turkey steaks
    • 1 spring onion, sliced
    • 1 knob butter

    1. Juice half of the lemon and cut the other half into thin slices. Mix sriracha sauce, fish sauce, dark soy sauce, honey, coconut sugar, lemon juice and garlic in a bowl.
    2. Use 2/3 of the sauce to marinate the turkey breast for at least 3 hours or better overnight in the refrigerator.
    3. Preheat the oven to 220 C / 200 C fan / Gas 7.
    4. Put the knob of butter into the very hot pan. Remove the turkey steak from the marinade and drain. Add to the pan an fry until browned, about 2 minutes each side.
    5. Transfer the turkey steak to a baking dish and pour over the unused marinade. Cover with the lemon slices and bake until no longer pink in the centre, about 10 minutes.
    6. Serve with Thai jasmine rice and vegetables of your choice, such as pak choi.


    If you use super hot sriracha sauce, use only 2 tablespoons.
