Vegan 'soured cream'

    Tofu, lemon juice, olive oil and vinegar are blended together creating a vegan version of soured cream. This topping is lemony and thick and my hubby can't tell the difference!

    • 340g firm tofu
    • 1 lemon, juiced
    • 1 tablespoon olive oil
    • 1 1/2 teaspoons white vinegar
    • 1/2 teaspoon salt

    1. Combine tofu, lemon juice, olive oil, vinegar and salt in a food processor or blender; blend until smooth.
