Pressure cooker chicken thighs with spicy sauce

    This quick and easy chicken recipe uses a pressure cooker to give you moist chicken thighs, coated in a chilli sauce in just under 30 minutes.

    Serves: 8 

    • 900g boneless, skinless chicken thighs
    • 1 teaspoon ground paprika
    • salt and ground black pepper to taste
    • 1 onion, minced
    • 120ml chilli sauce
    • 120ml water
    • 2 tablespoons vinegar

    1. Heat pressure cooker over medium heat; cook chicken thighs until browned, 2 to 3 minutes per side. Sprinkle paprika, salt and pepper onto chicken.
    2. Combine onion, chilli sauce, water and vinegar in a bowl; pour over chicken.
    3. Cover pressure cooker with lid and cook according to manufacturer's instructions, about 15 minutes. Remove from heat and release pressure through natural release method; open pressure cooker carefully.

    Fantastic! I used a homemade version of "chili" sauce not knowing what "chile" sauce was. I made a half portion (using skin-on, leg quarters) in a 7-quart pressure cooker. I started with a bit more sauce and water than written just in case. After 15 minutes, the chicken wasn't cooked all the way and needed a bit more liquid. After 22 minutes total, the chicken was cooked throughout; tender-literally falling off the bone; and juicy with extra sauce. The flavor was unbeatable. Really, really delicious.
