Chilli coconut cloud eggs

    With just a few ingredients and a little skill you can start your day off firmly on the right foot with your head in the clouds. Fluffy egg whites are mixed with spicy chilli flakes and the desiccated coconut. The chilli flakes are perfect for raising your metabolism and making you feel fuller for longer while the cholesterol free coconut contains nutrients like manganese and copper and is a good source of dietary fibre.

    Serves: 2 

    • 3 large eggs
    • 2 tablespoons desiccated coconut
    • 1/2 teaspoon chilli flakes
    • 1 pinch salt
    • 1 pinch pepper

    1. Separate the yolks from the egg whites.
    2. In a large mixing bowl, beat the egg whites until soft peaks form.
    3. Fold in the desiccated coconut, chilli, salt, and pepper.
    4. Divide the fluffed egg whites into 3 dollops over a baking tray lined with baking parchment. Make a small dent in the centre of each.
    5. Bake at 230 C / Gas 8 for 3 minutes.
    6. Take out of the oven and put the yolks in the centre of each egg cloud.
    7. Finish baking until the yolks are set, another 2 to 3 minutes.
