Microwave candied almonds

    Candied almonds are quick, easy and economical to make in the microwave but they can scorch easily if left in for too long. Make sure to only add 1 to 2 tablespoons water as directed in the recipe, otherwise it will become very sticky. Enjoy as a snack or use to decorate cakes or cheesecakes.

    Serves: 1 

    • 200g whole unpeeled almonds
    • 1 level teaspoon ground cinnamon
    • 4 tablespoons sugar or vanilla sugar
    • 1 to 2 tablespoons water

    Method

    1. Line a baking tin with baking parchment; set aside to use later.
    2. Place the almonds in a microwave safe bowl. Add cinnamon, sugar and water and mix well.
    3. Start the microwave and let the nuts caramelise for 1 minute. Stir and let caramelise for 2 more minutes. This is the time it takes in a 600 watt microwave, times may differ depending on your microwave.
    4. Carefully (the almonds are very hot) spread the almonds on the baking parchment and let cool.
