Vegetarian chickpea tacos

    Vegan tacos could not be any simpler than these! Simply made with chickpeas seasoned with taco seasoning. Serve in taco shells and add any toppings you want.

    Serves: 4 

    • 2 (400g) tins chickpeas, drained and rinsed
    • 180ml water
    • 2 tablespoons taco seasoning mix
    • 8 taco shells

    1. Place chickpeas in a saucepan over medium heat. Add water and taco seasoning. Cook and stir until thoroughly heated, 5 to 7 minutes. Remove from heat. Mash mixture to crush chickpeas.
    2. Divide chickpea filling evenly among taco shells.
