Courgette and orange jam

    One of my childhood memories was my dad making a courgette jam. He passed away 15 years ago and took his recipe with him. I never thought of making one myself until my neighbour asked me to look after and use her garden goodies. The amount of courgette I harvested! There was no way I'd manage to eat them myself. I decided to find a recipe my taste buds were remembering, just the way daddy made. No luck, though I did find one similar and made it my way.

    Makes: 6 jars

    • 1.5kg courgette, peeled, seeded and cubed
    • 6 small oranges, peeled and cubed
    • 750g caster sugar
    • 1 lemon, zested and juiced
    • zest of 1 orange

    1. Cover courgette and oranges with sugar in a large bowl and leave it overnight in a cool place.
    2. Add lemon juice and bring it to the boil. Cook till it softens, about 15 to 20 minutes. Leave it to cool for 2 to 4 hours.
    3. Bring back to the boil and simmer till thickened, about 1 hour. At the end, add the orange and lemon zest.
    4. Fill into jam jars and boil in a water bath for about 45 minutes.
